To create a dish that partners perfectly with a wine, one first needs to drink the wine. That’s the kind of selfless chef Peter is, constantly tasting and concocting. Awful job hey? When it comes to a match for the complex and layered 2008 Dead Arm Shiraz, a dish with richness and depth is in order, which is where the beef cheek dish comes into play. To cook the dish, Peter takes the cheeks and slowly braises them in lashings of Dead Arm and a goodly mound of caramelised mirepoix - local vegetables of course - with a subtle flourish of Asian spices until they are sweet and fall apart. He then adds a fluffy pillow of a steam bun oozing with the richness of mushroom and tang of salted plum, alongside sweet and aromatic caramel green beans and earthy and velvety edamame puree. All that is left to add now is a generous pour of the 2008 Dead Arm you’ve arrived in a very happy place indeed.
