To celebrate Aussie wine month, Quay will be offering a classic all-Australian wine match for our signature tasting menu.


 "Right now the Australian wine industry is travelling in a renaissance, we have moved far and wide from where we were 20 years ago. It is the most exciting time in the history of our industry and we want to share that with our guests.

"We have a unique freedom in Australia that allows us to do whatever we want, whenever we want. Our winemakers can be more playful which offers today’s consumers a really dynamic and exciting opportunity that Aussie wine drinkers really should wake up to.

Established wine makers and new wine makers are working together to produce some high quality, fun drinking wines that can be enjoyed any day of the week.

Aussie wine month gives me a platform to showcase all the exciting things happening in the industry. One of my favourite Australian wine matches for the tasting menu is Pete’s honey dish. I’m serving it with an outstanding fortified wine from South Australia,  Bleasdale, Fortis et Astutus Tawny; this wine makes my heart beat faster. It’s dynamic, pure and downright delicious. And this is the case for so many Australian wines right now. Consumers need to understand that our industry has moved on faster than our reputation. It’s an exciting time in wine in Australia. 

I consider Peter’s jowl dish to be one of the most flexible in terms of food and wine pairing. You can serve red, white, rose or sparkling wine with it. You’re eating and drinking according to the moment. I recommend that you follow your mood and the season. This is really important to consider when matching food and wine.”
